I'm new to the Audit Profiles in Ignition. I was hoping to use it to keep track of changes to tags and UDT's. First, is it possible to get this level of granularity out of the Audit Logs? Second, if so, how?

Yes, Audit Profiles can track tag changes. You can see how to configure an Audit Profile [here](https://docs.inductiveautomation.com/docs/8.1/platform/audit-log-and-profiles) and what actions are audited [here](https://docs.inductiveautomation.com/docs/8.1/platform/audit-log-and-profiles/auditing-action-reference).
