Looking to create new Datasoruce History tag Provider but can’t see the option to create one !

Do you have the tag historian module installed?
You don’t manually create datasource history providers. They’re automatically created for each datasource you add.
Ohh ! I see. Do i have to add any tables in the new database ?
or just create a blank database ?
As long as the Ignition user has access to create tables on the specified DB, they’ll be automatically created once you start storing history.
