I am trying to change color of the outline of the blue pilot light symbol to red but when i try to do so, it fills the entire symbol with red color. I have posted the screenshots regarding the issue.
The second image shows how the view initially looks but I want color the border of the blue circle to red color.

You are changing the fill for the element. If you want the "outline" or stroke, you should change props.elements.[number].stroke.paint.

Yes, but now the structure of the elements seems different then from the original post.
Which element of a symbol factory are you using?

Looks like you are using Blue pilot light 2. Changing it's stroke is very obvious
