Hello, I am using Ignition 7.9.10 in a machine, I updated Java in the machine. but when I did it, I can´t open the Ignition proyects anymore because Jva 1.7 is required

Re-install java 7.
If you want to continue running unsupported old software, don't install any update that will break it.
Even better would be to upgrade to v8.1. Many bugs and security issues have been fixed in 8.1 that have not been fixed in EOL v7.9.

Did you download the JNLP file again after changing that setting?
