Is it possible to configure multiple failover nodes for an OPC client? Currently, we have a two-node failover setup—are there options available to support additional failover nodes?

No, nothing like that.
Some time in the near-ish future I'm hoping we get around to implementing actual OPC UA non-transparent redundancy support in Ignition's OPC UA client rather than the janky manual failover thing it has now.
The way OPC UA redundancy works there can be any number of servers in the redundant server set.

yes, if non-transparent UA available, things would be simpler. any timeline or feature in progress??
The OPC UA and driver roadmap for after the 8.3 release is not yet decided. A lot of possibilities, no priorities assigned yet.
