I would like to have all the existing text selected in a table when the user double-clicks to edit the data so new data is overwritten instead of having to delete the old data first.

Also, if you keep clicking quickly eventually all the text will be selected and you can type and it will overwrite what is there. You need to quadrupal click the text.
You also might be interested in the “Edit Click Count” property on the table.

Took a closer look at this…
If the cell is not in edit mode, a quad-click will highlight all text.
If it is in edit mode, a triple-click will highlight all the text.
