Is there a list of commands that can be issued for the gateway that I can execute in a shell? Mainly looking for stuff like changing ports, starting/stopping, etc.

Yes, it is the command-line version of the GCU, known as gwcmd. You can run gwcmd -i in a terminal to see all available commands, or you can see the commands here. gwcmd is located in the Ignition installation folder, but should be available from anywhere if the Ignition installation folder is in your system path.
