So currently we have data in the system that only changes once every couple weeks, so the timestamp shows an "old" date even though it's not. I was just wondering if there was a way to have the timestamp update more often or update even though the value didn't change

How are you collecting this data and time stamping it? We need way more info.
The sourceTimestamp is used to reflect the timestamp that was applied to a Variable value by the data source. Once a value has been assigned a source timestamp, the source timestamp for that value instance never changes. In this context, “value instance” refers to the value received, independent of its actual value.

If you require confidence that the value is valid then examine the tag quality.
