How does one change the colour of the toggle switch so that in Selected state + enable being true; the colour of the toggle must not be grey. By default as soon as you set enabled to false, the toggleswitch goes grey.

Why would you change this? Disabled input elements are universally expected to be "greyed out".
We don't expose disabled style properties for this (or any?) component. You're welcome to use your own custom theme files or the stylesheet.css resource to supply your own colors, but I agree with @pturmel : you'd be going against pretty universally accepted and expected behaviors if you do so.
